Red Onion, Potato, and Goat Cheese Pizza

Ingredients

  • 1 cup (4 ounces) shredded part-skim mozzarella cheese
  • 1 teaspoon olive oil
  • 1 (13.8-ounce) can refrigerated pizza crust dough
  • 2 tablespoons cornmeal
  • 7 ounces fingerling potatoes (about 5 potatoes)
  • 1 medium red onion, cut into 1/2-inch-thick slices
  • ¾ cup (3 ounces) crumbled goat cheese
  • + 2 more ingredients
    • 1 garlic clove, minced
    • 1 ½ teaspoons fresh thyme leaves

1. Preheat oven to 450°. 2. Place potatoes in a saucepan; cover with water. Bring to a boil. Cook 10 minutes or until just tender; drain.
