Ingredients

  • 1 pound ricotta
  • ½ cup grated pecorino
  • 3 cups all-purpose flour
  • 5 eggs
  • 1 tablespoon kosher salt
  • 2 eggs
  • 1 cup shredded mozzarella (or mild cheddar or Gouda)

    • 1 cup salami, such as sopressata
    • ½ teaspoon freshly ground black pepper
