Sausage, Fennel, and Provolone Calzones

  • All-purpose Pizza Dough
  • 1 ½ cups sliced red bell pepper
  • 1 tablespoon yellow cornmeal
  • 1 large egg
  • 1 tablespoon water
  • 4 ounces sweet Italian sausage
  • 2 cups thinly sliced fennel bulb (about 1 medium bulb)
  • + 2 more ingredients
    • ¾ cup (3 ounces) grated sharp provolone cheese
    • 1 cup vertically sliced onion

Remove casing from sausage. Cook sausage in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Add fennel, bell pepper, and onion.
