  • 2/3 cup ricotta cheese, divided
  • 2 tablespoons olive oil, divided
  • ¼ cup grated Parmesan cheese, divided
  • ¼ teaspoon dried crushed red pepper
  • 1 (1-lb.) loaf semolina bread (about 14" long)
  • 1 ½ teaspoons dried oregano
  • ¼ teaspoon salt

    • 1 onion, halved and thinly sliced
