Tomato, Mushroom, and Mozzarella Pizza

Ingredients

  • 1 ½ cups shredded smoked mozzarella or smoked Gouda
  • 2 (10-ounce) portions frozen pizza dough, thawed
  • 2 cups seeded and chopped plum tomatoes
  • 2 tablespoons olive oil
  • 2/3 cup black olive halves
  • 1 cup thinly sliced mushrooms
  • 2 cups seeded and chopped plum tomatoes

    • 2 tablespoons olive oil
    • 1 cup thinly sliced mushrooms

Arrange oven racks in the lower and upper third of the oven. Heat oven to 475°F.
