Ingredients

  • 1 small red onion
  • ¼ cup parmesan shavings
  • 6 (1/3-inch round country loaf
  • 1 (2-ounce) piece prosciutto or ham
  • 1 (10-ounce) package frozen peas
  • 2 scallions
  • 6 tablespoons extra-virgin olive oil
  • + 2 more ingredients
    • 2 (6 1/2-ounce) jars marinated artichoke hearts
    • 3 tablespoons fresh mint

Preheat broiler. Arrange bread in 1 layer on a baking sheet, then brush tops with 2 tablespoons oil and season with salt and pepper. Broil until golden brown and transfer to a rack.
