  • 1 teaspoon ground black pepper
  • 2 tablespoons frozen orange juice concentrate
  • 1 9- to 10-pound fully cooked bone-in ham (shank or butt end)
  • 2 ½ cups Madeira
  • 1 ½ cups whole-grain Dijon mustard
  • 1 cup orange juice
  • 2 tablespoons minced garlic
  • + 3 more ingredients
    • 3 tablespoons dried marjoram
    • 2 tablespoons fresh marjoram
    • ½ cup golden brown sugar

Preheat oven to 400°F. Mix first 6 ingredients in medium bowl. (Can be prepared 1 day ahead. Cover and refrigerate) Line large roasting pan with double layer of foil.
