Crustless Cheesy Quiche

Ingredients

  • ½ stick(s) butter (¼ cup)
  • ¼ cup(s) flour
  • 1 cup(s) cottage cheese
  • ½ teaspoon(s) baking powder
  • ½ teaspoon(s) Salt
  • ½ teaspoon(s) Dijon mustard
  • 5 eggs

    • ¾ cup(s) Milk
    • 6 ounce(s) shredded Swiss or cheddar cheese
    • 3 tablespoon(s) Parmesan cheese
    • ¼ cup(s) green onions, chopped
    • 3 slice(s) cooked bacon, crumbled (use ready to serve precooked bacon, or diced ham if pressed for time)
    • 1 tomato, sliced and set on a paper towel to drain
