Poached Eggs with Roasted Tomatoes, Mushrooms, and Ham

Ingredients

  • 1 teaspoon distilled white vinegar
  • 1 garlic clove
  • ¾ pound mushrooms
  • ¼ teaspoon black pepper
  • 8 1/2-inch-thick slices Italian bread
  • 5 tablespoons olive oil
  • 8 large plum tomatoes (1 1/3 lb)
  • + 3 more ingredients
    • 8 large eggs
    • ¼ pound thinly sliced smoked ham
    • ½ teaspoon salt

Preheat oven to 400°F. Toss tomatoes and mushrooms with salt, pepper, and 2 tablespoons oil in a roasting pan.
