Ingredients

  • 2 teaspoons olive oil
  • 1 cup chopped reduced-fat ham (about 4 ounces)
  • ¾ cup (3 ounces) shredded Gruyère cheese
  • ½ cup thinly sliced shallots
  • ¾ teaspoon freshly ground black pepper, divided
  • 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
  • 7 cups (1/8-inch-thick) slices Yukon gold potato (about 2 1/2 pounds)

    • 1/3 cup all-purpose flour
    • 2 cups 1% low-fat milk
    • 1/8 teaspoon grated whole nutmeg
    • 2 garlic cloves, minced
