Ingredients

  • 1 large onion
  • 2 ½ cups low-sodium chicken broth
  • 4 garlic cloves
  • ½ teaspoon anise seeds
  • ½ cup fresh cilantro
  • ¾ teaspoon black pepper
  • ½ cup soy sauce
  • + 11 more ingredients

    • 2 4- by 1-inch strips fresh orange zest
    • 1 tablespoon sugar
    • 3 pounds boneless pork shoulder
    • ½ cup Chinese rice wine or medium-dry Sherry
    • 4 1/2-inch-thick slices fresh ginger
    • 2 tablespoons vegetable oil
    • 3 fennel bulbs (sometimes called anise)
