Island-style Pulled Pork Sandwiches

Ingredients

  • 1 tablespoon ground cumin
  • 4 large garlic cloves, peeled
  • ½ cup lime juice
  • 1 tablespoon dried oregano
  • 1 to 1 1/2 qts. reduced-sodium chicken broth
  • 1 tablespoon apple-cider vinegar
  • About 1 tsp. kosher salt
  • + 7 more ingredients
    • About 5 lbs. bone-in pork shoulder (also called butt), tied
    • 4 celery stalks, cut into chunks
    • 2 medium onions, quartered
    • 16 small, soft sandwich rolls, split
    • 2 cups orange juice
    • 2 large carrots, cut into chunks
    • About 1 tsp. freshly ground black pepper

1. Rinse pork and put in a large pot. Add onions, carrots, celery, garlic, cumin, oregano, orange juice, lime juice, and enough chicken broth just to cover meat.
