Island-style Pulled Pork Sandwiches
Ingredients
- ½ cup lime juice
- About 1 tsp. freshly ground black pepper
- About 5 lbs. bone-in pork shoulder (also called butt), tied
- About 1 tsp. kosher salt
- 1 tablespoon apple-cider vinegar
- 1 to 1 1/2 qts. reduced-sodium chicken broth
- 1 tablespoon dried oregano

- 2 cups orange juice
- 16 small, soft sandwich rolls, split
- 2 medium onions, quartered
- 2 large carrots, cut into chunks
- 4 celery stalks, cut into chunks
- 4 large garlic cloves, peeled
- 1 tablespoon ground cumin
1. Rinse pork and put in a large pot. Add onions, carrots, celery, garlic, cumin, oregano, orange juice, lime juice, and enough chicken broth just to cover meat.
