Ingredients

  • hard cheese (such as gruyère, emmental or cheddar), grated
  • salt and freshly ground black pepper
  • 250ml/9fl oz passata (pressed and seived tomatoes)
  • 1 clove fresh garlic, crushed to a paste in a pestle and mortar
  • 1 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 tsp mustard
  • + 8 more ingredients
    • 1 tbsp plain flour, plus extra for dusting
    • 1 free-range egg yolk
    • 500g/1lb 2oz pork mince
    • pinch cumin
    • ¼ tsp celery salt
    • ½ tsp dried oregano
    • 1 Spanish onion, finely chopped
    • 2 tbsp olive oil
