BBQ Freaks Tamarind-Glazed Pork Chops

Ingredients

  • 1 sprig fresh thyme
  • 1 medium yellow onion
  • 1 cup tamarind pulp
  • 1 cup sugar
  • Dried thyme
  • 4 quarts water
  • Granulated garlic
  • + 11 more ingredients
    • 1 cup honey
    • 3 cloves garlic
    • ½ cup rum (añejo)
    • Kosher salt
    • 1 cup salt
    • 4 whole nutmegs
    • 8 center-cut pork chops, about 2 1/2 inches thick
    • 30 whole cloves
    • 1 tablespoon vegetable oil
    • cracked black pepper
    • 3 cups beef stock

To make the glaze: Place the vegetable oil in a medium skillet over medium-high heat. Add the onion, garlic, and thyme and cook until the onion and garlic begin to brown, 7 to 10 minutes.
