- 1 tablespoon light brown sugar
- 5 1/2-inch-thick boneless pork loin chops
- 1 tablespoon pure ancho chile powder
- Extra-virgin olive oil for brushing
- Kosher salt
- 1 ½ teaspoons crushed red pepper
