Greek-Style Pork Chops

Ingredients

  • ½ cup diced red onion
  • 1 cup diced seeded cucumber
  • ¾ cup plain fat-free Greek-style yogurt
  • 4 (4-ounce) boneless center-cut loin pork chops
  • 2 teaspoons olive oil, divided
  • 1 teaspoon dried oregano
  • 2 tablespoons red wine vinegar, divided
  • + 5 more ingredients
    • 1 ½ cups diced plum tomatoes (about 2 medium)
    • ½ teaspoon salt, divided
    • 1 tablespoon chopped fresh dill
    • 2 garlic cloves, minced
    • Cooking spray
