Ingredients

  • 1 cup ice cubes
  • 1/3 cup granulated sugar
  • 3 tablespoons olive oil, divided
  • 4 cups sliced white onions
  • 3 teaspoons black peppercorns, divided
  • 2 cups chopped peeled peaches (see Notes)
  • 1 sprig plus 2 tsp. chopped fresh rosemary
  • + 15 more ingredients
    • ½ cup packed light brown sugar
    • 4 bone-in center-cut pork chops (1 3/4 lbs. total)
    • ½ cup plus 1 tsp. kosher salt*
    • 1 sprig plus 2 tsp. chopped fresh rosemary
    • 3 tablespoons olive oil, divided
    • 2 cups chopped peeled peaches (see Notes)
    • 1/3 cup granulated sugar
