  • 3 tablespoons hoisin sauce
  • Chopped shallots
  • 3 cloves garlic, finely diced (1 tablespoon)
  • 1 ½ tablespoons/20 g minced pork fat
  • 1 ½ tablespoons/20 g cooked and shredded pork skin*
  • 3 tablespoons chile sauce

    • 6 baguettes, warm
    • 2 tablespoons vegetable oil
    • 12 lemongrass stalks, trimmed
    • 1 tablespoon fish sauce
    • Freshly ground black pepper
    • ½ tablespoon sugar
    • 7 ounces/ 200 g minced (ground) pork
    • 3 ½ ounces/ 100 g minced (ground) beef
