    • 2 pounds pork tenderloin
    • ½ cup chopped onion
    • 1 tablespoon olive oil
    • 1 ½ teaspoons unsweetened cocoa
    • 1 ½ teaspoons ground cinnamon
    • 1 tablespoon grated peeled fresh ginger
    • 2 garlic cloves, chopped
    • 1 tablespoon ground coffee

Heat oil in a large skillet over medium-high heat. Add onion; sauté 5 minutes. Add ginger, garlic, and serrano; sauté 2 minutes. Stir in molasses. Remove from heat; carefully stir in rum.
