Ingredients

  • 4 (4-ounce) boneless center-cut loin pork chops, trimmed
  • ½ of 1 jalapeño pepper, seeded and finely chopped (about 2 teaspoons)
  • ¼ teaspoon grated lime rind
  • ¼ teaspoon grated lime rind
  • 1 cup chopped fresh pineapple
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons finely chopped red onion
  • + 11 more ingredients
    • ¼ teaspoon black pepper
    • ¼ teaspoon ground red pepper
    • 8 dried apricots, chopped
    • Cooking spray
    • 1 cup chopped fresh pineapple
    • ¼ teaspoon black pepper
    • 2 tablespoons chopped fresh cilantro
    • 2 tablespoons finely chopped red onion
    • ¼ teaspoon salt
    • 2 tablespoons fresh lime juice
    • ¼ teaspoon ground allspice

Combine first 7 ingredients in a bowl; cover and chill 30 minutes. While salsa chills, combine salt and next 3 ingredients. Sprinkle both sides of pork with salt mixture; let stand 10 minutes.
