  • 1 garlic clove, minced
  • 6 cups (1/2-inch) cubed white bread (about 8 slices)

  • ¼ teaspoon ground ginger
  • ¼ teaspoon black pepper
  • Cooking spray

    • 2/3 cup apple jelly
    • 1 tablespoon garlic powder
    • 1 teaspoon grated lemon rind
    • ¼ teaspoon black pepper
    • 1 cup apple juice
    • ¾ teaspoon salt
    • ½ teaspoon ground allspice
    • ½ cup chopped onion
    • 1/3 cup chopped carrot
    • 3 pounds boned pork loin roast
    • ½ teaspoon dried rosemary
    • 1/3 cup chopped celery
    • ½ teaspoon dried thyme
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground cumin
    • 1 tablespoon butter or stick margarine
    • ¼ teaspoon salt
    • 1 ¼ cups diced ham (about 6 ounces)
    • Stuffing:
    • 2 teaspoons minced peeled fresh ginger
