Apricot-Hoisin Pork Chops with Somen

Ingredients
- ½ cup apricot preserves
- 4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
- 4 ounces uncooked somen (wheat noodles) or angel hair pasta
- 1 tablespoon hoisin sauce
- ¼ teaspoon black pepper
- ½ cup fat-free, less-sodium chicken broth
- ¼ teaspoon salt

Cook noodles according to package directions. While noodles cook, combine broth, preserves, and hoisin in a medium bowl, stirring with a whisk.
