Ingredients

  • ½ teaspoon black pepper
  • 4 3/4-inch-thick center-cut pork chops (about 2 lb total)
  • 2 tablespoons olive oil
  • 2/3 cup balsamic vinegar
  • 1 ½ teaspoons sugar
  • 1 teaspoon salt
  • 6 ounces small shallots

Pat pork dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
