Ingredients

  • 3 Tbs. freshly grated Parmigiano-Reggiano
  • 1 Tbs. olive oil
  • 1 Tbs. butter
  • ½ lb. fresh bulk pork sausage or link sausage, lightly crumbled
  • ½ cup soft, coarse, fresh breadcrumbs (don’t use crusts)
  • 1 tsp. salt
  • ½ lb. freshly ground beef
  • + 7 more ingredients
    • 1 clove garlic, minced
    • ¾ cup finely chopped fresh flat-leaf parsley
    • ¾ tsp. crumbled dried sage
    • ¼ tsp. minced fresh rosemary
    • 1/8 tsp. freshly ground black pepper
    • 1-½ tsp. crumbled dried basil
    • 1/3 cup half-and-half

In a large bowl, soak the breadcrumbs in the half-and-half until plumped and the liquid is absorbed, about 5 minutes.
