Cardamom-Crusted Pork with Mushroom Sauce

Ingredients

  • 1 tablespoon butter, room temperature
  • 1 tablespoon all purpose flour
  • ½ cup whipping cream
  • 2 cups canned low-salt chicken broth
  • 1 ½ pounds mushrooms, halved
  • 1 4-pound boneless pork rib roast
  • 1 large garlic clove
  • + 3 more ingredients
    • 5 tablespoons olive oil
    • 2 ¼ teaspoons ground cardamom
    • 1 ½ cups chopped onion

1. Preheat oven to 350°F. Puree 1/2 cup chopped onion, 2 tablespoons oil, 2 teaspoons cardamom, and garlic in processor. Spread 1/2 cup chopped onion in center of large roasting pan; top with pork.
