Ingredients

  • 1 tablespoon olive oil, divided
  • ½ teaspoon kosher or sea salt, divided
  • ½ cup minced shallots (about 4)
  • 1 teaspoon Dijon mustard
  • 2/3 cup white wine
  • ¼ cup chopped fresh flat-leaf parsley
  • ½ teaspoon black pepper, divided
  • + 3 more ingredients
    • ¼ cup thinly sliced cornichons
    • 6 (6-ounce) bone-in loin pork chops (about 1/2 inch thick), trimmed
    • 2/3 cup fat-free, less-sodium chicken broth

Sprinkle the pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.
