Cranberry-Glazed Pork

Ingredients

  • 1/8 teaspoon ground red pepper
  • 2/3 cup packed dark brown sugar
  • 1 cup fresh cranberries
  • 1 tablespoon minced peeled fresh ginger
  • 1 cup coarsely chopped peeled cooking apple
  • Cooking spray
  • ¼ teaspoon salt

    • ½ cup water
    • 1 teaspoon curry powder
    • ¼ cup chopped onion

Preheat oven to 350°. Combine first 8 ingredients in a small saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Uncover; simmer 2 minutes or until thick. Cool 10 minutes.
