Hoisin Pork Medaillons

Ingredients

  • ¼ cup plus 2 tablespoons water
  • 3 tablespoons hoisin sauce
  • 3 tablespoons chopped fresh cilantro
  • 1 (1-pound) pork tenderloin, cut into 1/2-inch slices
  • ¼ to 1/2 teaspoon dried crushed red pepper
  • Cooking spray
  • 1/3 cup dry sherry
