Ingredients

  • ¼ teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • Chopped fresh cilantro (optional)
  • 1 teaspoon ground red pepper
  • ½ teaspoon ground coriander
  • 4 cups (1 1/2 pounds) baking potato, cut into 1/2-inch cubes
  • 1 tablespoon finely chopped fresh ginger
  • + 12 more ingredients
    • 1 teaspoon cumin seeds
    • 6 garlic cloves, crushed
    • ½ teaspoon ground cardamom
    • 2 pounds boneless pork loin, trimmed and cut into 1/2-inch cubes
    • 2 teaspoons sugar
    • Cooking spray
    • ½ teaspoon ground cinnamon
    • 1 cup fat-free, less-sodium chicken broth
    • 3 tablespoons white vinegar
    • ¾ teaspoon salt
    • 2 cups chopped onion (1 medium)
    • 1 (28-ounce) can diced tomatoes, undrained
