Marinated Roast Pork with Cilantro Potatoes

  • ¼ cup Niçoise or kalamata olives
  • ½ teaspoon pepper
  • 2 teaspoons lemon juice
  • About 3 tbsp. chopped cilantro
  • 3 tablespoons extra-virgin olive oil
  • About 1 ½ tsp. kosher salt, divided
  • 2 pounds thin-skinned potatoes, peeled and cut into 1 ½- to 2-in. chunks

    • 4 pounds boneless pork shoulder (butt)
