  • 6 tablespoons soy sauce
  • 1 3-inch piece fresh ginger
  • 1 cup shallots
  • 1 teaspoon fresh coarsely ground black pepper
  • 1 teaspoon kosher salt
  • 4 pounds pork spare ribs
