Meat Loaf with Red Wine Glaze Recipe

Ingredients

  • 2 slices of white sandwich bread, torn into pieces
  • ½ cup milk
  • 1 large egg
  • 1 large egg yolk
  • 2 tablespoons coarsely chopped flat-leaf parsley
  • 1 ½ teaspoons finely chopped sage
  • 1 teaspoon finely chopped thyme

    • Pinch of freshly ground black pepper
    • Pinch of freshly grated nutmeg
    • Pinch of cayenne pepper
    • ¾ cup freshly grated Parmigiano-Reggiano cheese
    • ¼ cup plain dry bread crumbs
    • 2 tablespoons unsalted butter
    • 1 medium white onion, finely diced
    • 4 garlic cloves, minced
    • 1 pound ground lamb
    • ½ pound ground pork
    • ½ pound ground veal
    • Vegetable oil, for brushing
    • 1 ¼ cups dry red wine
    • ¼ cup sugar
    • 1 tomato, finely chopped
    • Pinch of ground allspice
    • 1 teaspoon unsulfured molasses
