Noodles With Meat Sauce

Ingredients

  • Garnishes:
  • 6 – 8 radishes, thinly sliced or cut into matchsticks
  • ½ cucumber, cut into matchsticks
  • Other ideas: Shredded lettuce, blanched mung beans sprouts, shredded scallions, blanched and shredded spinach
  • .10 – 12 ounces Chinese egg noodles (I used 300 grams)
  • .Sauce:
  • 4 tablespoons brown bean sauce or substitute brown miso
  • + 9 more ingredients
    • 4 tablespoons hoisin sauce
    • 1 tablespoon sugar
    • ½ cup water
    • Pinch of chili paste (to taste, optional)
    • .Other:
    • ¾ lb ground pork or beef
    • 2 scallions, finely chopped
    • 1 ½ tablespoons peanut or vegetable oil
    • 1 tablespoon finely chopped garlic

Prepare the garnishes that you are going to serve. Boil the noodles according to the package directions. They should be cooked to the al dente stage. Drain. For the sauce, combine the 4 tablespoons brown bean sauce or miso with the 4 tablespoons hoisin sauce, 1/2 cup water, 1 tablespoon sugar...
