Pan-Seared Pork Chops with Apple-Ginger Chutney

  • 3 Tbs. minced fresh ginger
  • 4 Tbs. unsalted butter
  • 1 medium yellow onion, thinly sliced
  • 1/8 tsp. cayenne
  • 3 Tbs. chopped fresh cilantro
  • 1 cup cider vinegar
  • 4 boneless center-cut pork loin chops, about 1 inch thick
  • + 5 more ingredients
    • Kosher salt and freshly ground black pepper
    • 1 cup packed light brown sugar
    • 1 Tbs. olive oil
    • 3 Granny Smith apples, peeled, cored, and cut into ½-inch dice
