Pan-Seared Pork Chops with Apple-Ginger Chutney
Ingredients
- 3 Tbs. chopped fresh cilantro
- 4 boneless center-cut pork loin chops, about 1 inch thick
- Kosher salt and freshly ground black pepper
- 4 Tbs. unsalted butter
- 1 cup cider vinegar
- 1 cup packed light brown sugar
- 3 Tbs. minced fresh ginger

- 1 medium yellow onion, thinly sliced
- 3 Granny Smith apples, peeled, cored, and cut into ½-inch dice
- 1/8 tsp. cayenne
- 1 Tbs. olive oil
In a large saucepan, combine the apples, onion, raisins, ginger, brown sugar, vinegar, 3 Tbs. of the butter, the cayenne, and 1/2 tsp. salt. Bring to a boil over high heat.
