Pan-Seared Pork Chops with Molasses-Plum Sauce

Ingredients

  • ½ teaspoon freshly ground black pepper, divided
  • ½ teaspoon salt, divided
  • 3 tablespoons cider vinegar
  • ¾ cup fat-free, less-sodium chicken broth
  • 2 teaspoons olive oil
  • Cooking spray
  • 2 tablespoons molasses
  • + 6 more ingredients
    • 4 (6-ounce) bone-in center-cut pork chops (about 1 inch thick)
    • 1/8 teaspoon ground coriander
    • ¼ cup dried blueberries
    • ½ cup chopped onion
    • Fresh parsley sprigs (optional)
    • 3 plums, pitted, peeled, and coarsely chopped (about 1 3/4 cups)

Heat oil in a medium saucepan over medium heat. Add onion; cook 3 minutes or until tender, stirring frequently.
