Ingredients

  • 1 teaspoon ground coriander
  • 1 teaspoon cornstarch
  • ¾ teaspoon salt, divided
  • 4 (6-ounce) bone-in center-cut loin pork chops, trimmed (about 1/2 inch thick)
  • ¼ teaspoon freshly ground black pepper
  • 1/3 cup red currant jelly
  • 2 teaspoons olive oil
  • + 7 more ingredients
    • 1 teaspoon water
    • Chopped fresh chives (optional)
    • 2 garlic cloves, minced
    • ¼ teaspoon dried thyme
    • 2 tablespoons cider vinegar
    • 1 cup fat-free, less-sodium beef broth
    • ¼ cup chopped shallots

Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork chops with coriander and 1/2 teaspoon salt. Add pork to pan; cook 3 minutes on each side. Remove from pan.
