Pork Chops with Dijon Cream Sauce


  • 1/3 cup fat-free half-and-half or fat-free evaporated milk
  • ½ teaspoon salt
  • 1 ½ tablespoons Dijon mustard
  • 1/3 cup fat-free, reduced-sodium chicken broth
  • Cooking spray
  • ½ teaspoon coarsely ground pepper
  • 4 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick)

Trim fat from chops. Sprinkle both sides of chops evenly with salt and pepper. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
