Ingredients

  • 4 1-inch-thick pork loin chops
  • 1 pint red grape tomatoes or cherry tomatoes
  • 3 tablespoons olive oil
  • ½ pint yellow grape tomatoes or cherry tomatoes
  • ½ teaspoon salt
  • 1 large onion
  • 2 ½ teaspoons balsamic vinegar

Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion with salt, stirring occasionally, until golden brown, about 8 minutes.
