Pork Chops with Orange and Thyme


  • 4 bone-in pork loin chops (1/2-inch thick)
  • ½ t salt
  • Freshly ground black pepper
  • 1 T unsalted butter
  • 1 large shallot, finely chopped (about 1/4 cup)
  • ¼ c fresh orange juice
  • 2 T fresh lemon juice
  • + 3 more ingredients
    • ½ c heavy cream
    • 1 T fresh thyme leaves or 1/2 teaspoon dried, crushed
    • 1 t grated orange rind
