Pork Medallions with Porcini Mushroom Sauce

Ingredients

  • 2 teaspoons olive oil
  • ¾ cup diced red onion
  • 1 ½ cups boiling water
  • 1 ½ cups (1 1/2 ounces) dried porcini mushrooms
  • Fresh rosemary sprigs (optional)
  • 1 garlic clove, crushed
  • 1 cup fat-free, less-sodium chicken broth
  • + 6 more ingredients
    • 1 teaspoon freshly ground black pepper
    • ¾ teaspoon salt
    • 1 (1-pound) pork tenderloin, trimmed and cut crosswise into 8 pieces
    • 1 teaspoon minced fresh rosemary
    • ½ cup dry Marsala or Madeira
    • 1 teaspoon butter

Combine mushrooms and 1 1/2 cups boiling water in a bowl. Cover and let stand 30 minutes or until tender. Drain in a colander over a bowl, reserving 1 cup liquid. Finely chop mushrooms.
