Ingredients

  • 1 tart apple such as Granny Smith
  • 1 ½ cups water, divided
  • 1 medium onion
  • 2/3 cup ruby Port
  • ¾ stick unsalted butter
  • ½ cup ruby Port
  • 1 (6-pound) bone-in pork loin roast
  • + 6 more ingredients
    • 10 slices bacon
    • 1 small shallot, finely chopped
    • 2 teaspoons arrowroot
    • ¼ pound pitted prunes
    • ¼ pound California dried apricots
    • 1 small shallot

Simmer apricots, prunes, and Port in a small heavy saucepan, covered, 5 minutes. Remove from heat and let stand 10 minutes.
