Pork Stroganoff

Ingredients

  • ¼ teaspoon freshly ground black pepper, divided
  • ¾ cup reduced-fat sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley
  • 1 (1-pound) pork tenderloin, trimmed and cut into (3 x 1/4-inch-thick) strips
  • 1 ½ cups dry white wine
  • 1 teaspoon fresh lemon juice

    • 1 ½ cups thinly vertically sliced onion
    • 1 tablespoon vegetable oil
    • ½ teaspoon salt, divided
    • 2 cups hot cooked medium egg noodles (about 4 ounces uncooked pasta)
    • 1 (8-ounce) package presliced mushrooms

Heat oil in a large heavy skillet over high heat. Sprinkle 1/4 teaspoon salt and 1/8 teaspoon pepper over pork, tossing to coat.
