Pork, Sweet Potato & Apple Sauté

  • 1 medium sweet potato (about 11 oz.), unpeeled
  • Kosher salt and freshly ground black pepper
  • 2 Tbs. coarsely chopped fresh flat-leaf parsley (optional)
  • 1-inch piece fresh ginger, peeled and finely chopped or grated
  • 1 medium yellow onion (about 6 oz.), peeled
  • 3 Tbs. unsalted butter
  • 3 Tbs. extra-virgin olive oil
  • + 3 more ingredients
    • 4 Tbs. cider vinegar
    • 1 Golden Delicious apple, unpeeled
    • 1 small pork tenderloin (about 1 lb.)

Cut the sweet potato, onion, and apple into 1/2-inch cubes or pieces and set each aside separately.
