Pork Tortas (Sandwiches)

Ingredients

  • 6 bolillos, sliced in half
  • ½ cup reduced-fat mayonnaise
  • ¼ cup chopped cilantro
  • 3 tomatoes, sliced
  • ½ cup thinly sliced pickled jalapenos
  • 2 cups refried black or pinto beans
  • 1 pound boneless center cut pork loin

1. Heat oven to 350 degrees F. Roast pork until the internal temperature as measured with an instant-read thermometer reaches 150 degrees F., about 30 minutes.
