Pork with Lemon-Caper Sauce

Ingredients

• 1 large egg white, lightly beaten
• ¼ teaspoon black pepper
• ¹/₃ cup all-purpose flour
• ¹/₈ teaspoon salt
• 1 tablespoon fresh lemon juice
• 2 teaspoons capers, rinsed and drained
• Cooking spray
