Pulled Pork with Mint Julep Barbecue Sauce

Ingredients

  • 1 bone-in pork shoulder, about 5 lb.
  • 2 tsp. red pepper flakes
  • 1 Tbs. salt
  • 1 Tbs. freshly ground pepper
  • 1 Tbs. yellow mustard seeds
  • 1 cup apple cider
  • 1 cup cider vinegar
  • + 18 more ingredients
    • 4 yellow onions, thinly sliced
    • 4 garlic cloves, chopped
    • 1 green bell pepper, seeded and finely chopped
    • 4 Tbs. (½ stick) unsalted butter
    • 3 yellow onions, thinly sliced
    • 2 Tbs. peeled and chopped fresh ginger
    • 2 cups tomato puree
    • ¾ cup dark molasses
    • 1/3 cup coarse-grain Dijon mustard
    • ½ cup bourbon
    • ½ cup cider vinegar
    • 2 Tbs. Worcestershire sauce
    • 1 lemon, sliced
    • Salt and freshly ground pepper, to taste
    • 1/3 cup chopped fresh mint
    • 1 tsp. Tabasco or other hot-pepper sauce
    • 12 sesame seed-topped sandwich buns, split and warmed
    • 12 dill pickle spears

Preheat an oven to 300°F. Lightly coat a large roasting pan with vegetable oil. Rub the pork shoulder with the pepper flakes, salt, pepper and mustard seeds and place in the pan.
