Roasted Spareribs

Ingredients

  • 1 cup cooked, mashed potatoes
  • Dash of pepper
  • 2 tablespoons butter or margarine
  • ½ cup water
  • ¾ cup soft breadcrumbs
  • ¼ cup chopped onion
  • ¼ teaspoon salt

    • 2 pounds pork spareribs (two rib sections)
    • 1 tablespoon chopped fresh parsley
    • ½ teaspoon salt
    • 2 tablespoons chopped celery
    • ¼ teaspoon pepper
    • 1 egg, beaten
    • ¼ teaspoon dried whole marjoram

Sauté onion and celery in butter in a skillet until tender. Stir in potatoes, breadcrumbs, egg, parsley, marjoram, 1/4 teaspoon salt, and dash of pepper. Place stuffing on one half of sparerib slab.
