Sauteed Pork Chops with Sweet-and-Sour Red Cabbage

- 1 ¼ teaspoons salt
- ¼ cup red-wine vinegar
- 1 small red cabbage (1 3/4 lb)
- 1 medium onion
- 1 instant-read thermometer
- ¾ teaspoon black pepper
