Spice-Rubbed Pork Tenderloin with Mango Sambal
Ingredients
- ¼ teaspoon garlic powder
- 1 serrano chile, seeded and finely chopped
- ½ teaspoon onion powder
- 2 teaspoons rice wine vinegar

- ¼ teaspoon dried thyme

- ½ teaspoon salt
- ½ teaspoon ground cumin
- 1 cup chopped peeled mango(about 1 mango)
- 1 (1-pound) pork tenderloin, trimmed
- 2 teaspoons fish sauce
- ¾ teaspoon chili powder
- ¾ teaspoon paprika
- 1 ½ teaspoons sugar
Preheat oven to 425°.To prepare pork, combine first 8 ingredients in a small bowl. Rub pork tenderloin with spice mixture; refrigerate for 20 minutes.Place pork on a broiler pan coated with cooking spray. Bake at 425° for 20 minutes or until meat thermometer registers 160°.
