Stir-Fried Pork with Broccoli and Cashews

Ingredients

  • 2 cups hot cooked long-grain rice
  • 2 teaspoons dark sesame oil
  • ¼ teaspoon crushed red pepper
  • 1 (1-pound) pork tenderloin, cut into thin slices
  • 1 tablespoon minced peeled fresh ginger
  • ½ cup chopped green onions
  • 1 tablespoon sugar
  • + 7 more ingredients
    • Cooking spray
    • 4 cups vertically sliced sweet onion
    • 3 garlic cloves, minced
    • ½ cup chopped dry-roasted cashews
    • 3 tablespoons low-sodium soy sauce
    • 2 cups small broccoli florets
    • ½ cup fat-free, less-sodium chicken broth

Place a large nonstick skillet coated with cooking spray over medium-high heat. Add sweet onion; cook 8 minutes, stirring occasionally. Remove the sweet onion from pan; place in a bowl.
